Those looking for the real deal need only visit Ted’s Oldtimer Lapaz Batchoy, owned by Hilario Borro and Adelfa Lepura Borro, the daughter of one of the dish’s innovators and creators, Ted Lepura. Ted opened one of the first batchoy stalls in a market in Lapaz in the 1940s; since then, the eatery has transformed into one of Iloilo’s most famous restaurants. In the hands of Ted’s daughter and her husband, the business has spread nationwide, with 19 branches throughout Luzon, Visayas and Mindanao. Filipinos from Manila to Roxas to Gen. Santos can now taste an authentic bowl of La Paz batchoy, still containing the homemade goodness of the real thing. |

Elpidio Paras Elpidio Paras understands the link between modern technology and business. After graduating with a degree in Mechanical Engineering in 1974, he opened an electronics repair company that installed some of the first digital lighting and amplified sound systems in discos in Visayas and Mindanao. In the 1980s, he ran the Sesame Sandwich Shop, a fast food restaurant offering widescreen TV coverage of sports events and music videos. He also opened Paras Video, which became the largest video rental shop in Mindanao. |

Matias & Terry Apistar Matias Apistar and his wife Terry did not start out in the property leasing and food catering business. Mr. Apistar is a practicing doctor while Mrs. Apistar is a dietary counselor. The couple began renting out apartments mainly to have a consistent income even after retirement.
